This delicious salsa is from the “Jen Cohen Loves Her Crock Pot” collection. This is so easy, yet really, really good. Easily doubled. 1 15-ounce can of red beans 1 15-ounce can of black beans 1 15-ounce can of sweet corn 1 15-ounce can of vegetable stock 1 jar of good quality salsa 2 cups shredded cheese ( I usually get pre-shredded Mexi-blend) 1 bag of corn chips (I like the blue ones) - Pour everything into crock pot.
- Cook for at least 7 hours
- Bring to Potluck and receive rave reviews
**To serve, place handful of chips on plate, top with chili and a sprinkling of cheese.
